Ode to the rubber chicken
Remember that trip to the Food basics I made last week where I bought the six little chickens that were on sale for 99 lb. Well I had this discussion on how stewing chickens were 5-6 lbs in the States and these were all around 2 lbs. He makes a crack about how Americans super-size everything and that is why they are smaller.. I remember laughing to myself thinking I should just cook one and toss those words right back into his super-sized lap.
So anyway being the size of a US fryer I think I can just season two and pop them into the oven and bake them. My first clue should have been the lack of browning but some olive oil and lime and browned right up. Fatboy wanted to run after work and do taxes so he just wanted to pull off a drumstick or two and eat later. Well the drumstick wouldn't just pull off he tried first to tell me that they weren't done but considering the time they were baking that was just not possible. So a pair of kitchen sheers later he is holding the rubber drumstick attempting to bite the thing attempting as it was rubber all right.
Now Mr Chicken (yea his father farmed chickens when he was a kid too) has now identified the chickens that were just "not Super-sized the American way" as laying hens and suggested in the future they be soup. We went and had the taxes done and Subway saved dinner.
I figured it wouldn't effect a boiled chicken to be roasted first other than the fact that there would be less the fat so I then boiled them last night, chilled them and boiled them again today. Those roasted, rubber, boiled, and boiled again stripped stewing chickens are now some mighty fine Chicken and dumplings.
And now I am boiling the bones again. Just to see if I can get some more broth
